The plants look just like normal sweet corn but are often shorter and bushier. The baby ears are tiny and perfectly formed. You harvest them when the fresh silks are just peeking out of the husk.
A corn plant has male flowers (the tassel on top) and female flowers (the ear with silk). Pollination turns the little cob into mature corn with tough seeds, which you don’t want. To get the most tender, seedless cobs, you remove the top tassel when it appears. It forces the plant to put all its energy into the ears.
