New Zealand spinach (Tetragonia tetragonoides) is not a true spinach but belongs to the fig-marigold family (Aizoaceae) and it is native to coastal regions of New Zealand, Australia, Japan, and South America.
The tender young leaves and shoot tips can be eaten raw in salads or cooked in stir-fries and soups. This leafy green is considered a powerhouse of nutrients, particularly rich in vitamins A, C, and K.
The plant is often touted for being very easy to cultivate. As it can be weedy and self-seeds freely. This plant is known for thriving in hot, dry conditions, unlike standard spinach that tends to “bolt” (go to seed) in summer.
